Toffee Bars with Goji Berries

In a basic food processor with the s-blade in place process the nuts from the base into a basic meal. Add in the cacao and spices and pulse until well combined. So today we choose to live with gratitude for the love that fills our hearts, the peace that surrounds us as we trust in Him, and the voice of hope that reminds us that all things are possible with God.

Stuffed Avocado Recipe Serves 2
2 Large Avocado
For the filling:
2 cups chopped kale or other dark leafy green
2 cups finely diced cucumber
1/2 cup chopped olives
2 tbsp sesame seeds (optional)
2 tbsp lemon/lime juice
1 tsp paprika
1/2 tsp sea salt
1) Remove the pits and avocado from 1/2 of the avocado (leaving the other 1/2 full)
2) In a mid-sized bowl combine all filling ingredients and the 1/2 avocado and massage until well combined.
3) Serve filling on top of a full half of avocado.

1 cup almond meal
1 cup coconut flour
2 scoops vegan protein powder
1/3 cup raw agave, raw coconut nectar or 4 drops stevia
1 tsp baking powder
1/2 tsp vanilla
1 tbsp ground flax seed or chia seed
1 1/3 cup water
1. In a measuring cup add the flax or chia seed and water, stir and let sit for 5
2. In a mid sized mixing bowl combine the rest of the dry ingredients and fold
3. Add the liquid sweetener to the water mix and pour into the dry ingredients, stir
until well combined.
This mix should be thicker than normal pancake batter but not like hummus. If your mix is too thick add water until it is more like a thick cake batter.
Well it’s been quite a unique 2020! So with that in mind we thought we’d take a moment to infuse an extra measure of grace for the season we find ourselves in and turn our focus on gratitude for what we’ve been given.
