Giving Thanks!!

We thought it would be a perfect time to affirm the source of goodness that exists in all of our lives. 

When we are thankful, we create an opportunity to magnify the goodness and it gives us the potential to thread together a life of being grateful.

And gratitude is deeply important because it helps us feel good, but also because it helps us do good. 

So today we choose to live with gratitude for the love that fills our hearts, the peace that surrounds us as we trust in Him, and the voice of hope that reminds us that all things are possible with God.

Chef Jenny's Stuffed Avocado Recipe

Stuffed Avocado Recipe                                       Serves 2

2 Large Avocado

For the filling:

2 cups chopped kale or other dark leafy green

2 cups finely diced cucumber

1/2 cup chopped olives

2 tbsp sesame seeds (optional)

2 tbsp lemon/lime juice

1 tsp paprika

1/2 tsp sea salt

 

1) Remove the pits and avocado from 1/2 of the avocado (leaving the other 1/2 full)

2) In a mid-sized bowl combine all filling ingredients and the 1/2 avocado and massage until well combined.

3) Serve filling on top of a full half of avocado.

Savoring the Good

How are you? We hope all is well in your neck of the woods! We thought with all that has been transpiring in 2020 we’d take a pause and remember all the good that is around us. This week, we want to remind ourselves and encourage you to “Savor the Good” all around us. 

Did you know, according to Harvard University and other research organizations, being more grateful for our surroundings has some amazing benefits such as:

  1. Lowering stress levels 
  2. Experiencing less depression 
  3. Being more optimistic 
  4. Feeling happier, experiencing higher levels of positive emotions and 
  5. Having greater resilience in difficult situations  

 Gratitude scientists have determined our happiness can increase exponentially by performing simple acts of “savoring”-paying attention to sights, smells and sounds when walking, hiking, golfing or even when commuting.

Chef Jenny's Pancake Recipe

Ingredients

1 cup almond meal

1 cup coconut flour

2 scoops vegan protein powder

1/3 cup raw agave, raw coconut nectar or 4 drops stevia 

1 tsp baking powder

1/2 tsp vanilla 

1 tbsp ground flax seed or chia seed

1 1/3 cup water

 

Directions 

1. In a measuring cup add the flax or chia seed and water, stir and let sit for 5 

   minutes.

2. In a mid sized mixing bowl combine the rest of the dry ingredients and fold 

    together.

3. Add the liquid sweetener to the water mix and pour into the dry ingredients, stir     

    until well combined.

This mix should be thicker than normal pancake batter but not like hummus. If your mix is too thick add water until it is more like a thick cake batter.

Our Favorite Stress Buster

We wanted to share some thoughts on our favorite stress buster and one simple way to create more joy in your life!
 

It’s been said, “A well lived life is like driving a car. Every time you get in the car you have a destination, but instead of putting it on “auto-pilot”, you get to decide to make turns, go faster or slower, and you have to make minor adjustments along the way.” 
 
Professionally, the most successful and experienced race car drivers have learned to slow their body and mind down and drive in the moment. The great one’s have learned to focus on the present…
 
…they are in tune with their body, their car, every turn along the road and they “feel every groove” off the road. 
 

Similarly, we can learn to be focused, present and mindful as we live with better balance so we can determine how much we enjoy the ride.
