Breakfast Quiche Cups

Makes 12

Ingredients 

12 eggs or 1 bottle vegan Just Egg*
1 cup chopped basil
2 cups diced red bell pepper
2 cups chopped spinach
1/4 tsp sea salt
1 Cup Daiya Vegan Cheese (optional)

 Directions

 1) Add all ingredients to a large mixing bowl in order listed and whisk after each add in. 

2) Pour into non-stick baking cups.

3) Bake at 350 degrees for 12 minutes.

4) Let cool and enjoy all week.

*Option- For a vegan option 1/2 the recipe and use 1 full bottle of "Just egg"

Dairy Free Chocolate Pudding

Serves 4

Ingredients

  • 6 ounces good quality bittersweet chocolate coarsely chopped
  • use liquid stevia drops to taste
  • 2 large egg at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 pinch sea salt
  • 1 cup canned coconut milk
  • 2 teaspoons  instant espresso optional
  • 1/2 teaspoon Chinese Five Spice optional, or try plain cinnamon

Tools

  • 4 2-ounce ramekins, cups or demitasse cups

Instructions

  • In the bowl of a food processor, combine the chocolate and  stevia and pulse until the chocolate is finely ground. Add the egg, vanilla and salt and pulse to a paste.
  • In a small saucepan, bring the coconut milk, espresso powder and spice to almost a boil over high heat, whisking to incorporate. Be careful and watch as it comes to a boil. It can boil over in the blink of an eye, and its a terrible mess to clean up.

The Rise Salad

Serves 1

1/2 cup baby kale, regular chopped kale or spinach
1/2 avocado
1 cup chopped cucumber or shredded zucchini
1/4 cup chopped walnuts or pumpkin seeds
1/2 cup fresh berries

Optional: Add your favorite protein

Toss salad together and drizzle with your favorite dressing

Balsamic Vinaigrette

2/3 cup olive oil
1/3 cup balsamic vinaigrette
1 clove garlic, minced
1 teaspoon Dijon mustard
Pinch of salt

Directions

1. Combine all ingredients in a glass jar and shake well till thoroughly blended.

Dr Hyman’s Picante Mango Smoothie

2 scoops collagen powder (about 2 tablespoons)
½ cup mango chunks, fresh or frozen
1 inch fresh spicy red chili or 1/2 teaspoon chili powder
1 tablespoon lime juice

½ cup coconut water
½ cup non-dairy milk
8 ice cubes

Quick & Easy Crockpot Chili

Servings 4-6

Ingredients

1 pound ground turkey
1 28 oz can diced tomatoes or Fire roasted diced tomato
1 28 oz can of tomato sauce
1 14 oz can black or kidney beans
1 cup chopped zucchini
1 onion chopped
2 bell peppers, any color seeded and chopped
6 cloves garlic minced
2 tablespoons olive oil
1/2 teaspoon chili powder
1/2 teaspoon paprika
1 teaspoon ground cumin
1/2 teaspoon of turmeric
Sea salt and pepper

Toppings:
Diced onion
Avocado

DIRECTIONS:

1. In a large saucepan, heat olive oil. Cook turkey and onion over medium-high heat, stirring often to break up meat, 5-10 minutes.

2. Add rest of ingredients to the crockpot. Add the meat and stir. Add zucchini 30 minutes before end of cooking time. Cook on low for 8 hours or high for 4 hours.

3. Serve with diced onion and avocado.
