Stuffed Avocado Recipe Serves 2
2 Large Avocado
For the filling:
2 cups chopped kale or other dark leafy green
2 cups finely diced cucumber
1/2 cup chopped olives
2 tbsp sesame seeds (optional)
2 tbsp lemon/lime juice
1 tsp paprika
1/2 tsp sea salt
1) Remove the pits and avocado from 1/2 of the avocado (leaving the other 1/2 full)
2) In a mid-sized bowl combine all filling ingredients and the 1/2 avocado and massage until well combined.
3) Serve filling on top of a full half of avocado.
