Peach High Energy Salad

Makes 2 servings

Ingredients
4 cups arugula, spinach or a mix of dark leafy greens
2 cups sliced peaches
1 cup cubed tofu
1/2 cup peppitas
2 tbsp. chopped red onion
For the dressing:
4 tbsp. olive or avocado oil
2 tbsp. stoneground mustard or balsamic
2 tbsp. raw agave nectar
Salt and pepper to taste
 
Directions

1) Mix all salad ingredients in a mid-sized mixing bowl.
2) Whisk dressing ingredients together in a small bowl.
3) Toss the salad with the dressing ingredients.
4) Chill and serve chilled.
